Good Food for a Rainy Day

Hello there!

Are you staying dry? Here it is cold, windy and rainy. It is projected for the winds to get up over 50mph - ouch!

Do you remember me telling you about the quesadilla burger I had from Apple bees? Well I made them at home; my way.

I DID IT................MY WAY! (singing of course)

Nice big burgers, cook 'em up! Season them with salt, pepper, and garlic powder.

Next put a tortilla (you want to match your burger size to your tortilla size so get the small ones which will actually be a large burger) on a griddle or skillet and sprinkle some cheddar cheese on it. Put your burger on when the cheese is just about melted. Add your guacamole to the top of your burger top it with another tortilla and flip it over to toast the other tortilla.

If you don't like your guacamole heated, after the cheese melts add the guacamole right in the center where your burger will go, then add the burger and the other tortilla and flip.

I did a quick guacamole, 1 avocado, salt, pepper, chopped garlic, chopped onion, chopped jalapeno (all to my taste), 1 tsp mayo and a few drops of lemon juice. I mash and mix, then taste till it tickles your taste buds.

Thinking in line here about inexpensive but great meals....this would have to be one. Ground beef is not that expensive and we always have tortillas on hand along with the seasonings. So the only thing I got extra was the avocado and jalapeno.

This was a big hit with my whole family! (all 3 of us)

I wonder how many variations of burgers you can actualy do? Well we'll start off with the first one the Quesadilla Burger.

I'm thinking my next one will include mushrooms and onions, YUM!
